2 C. uncooked quinoa
1 15 oz. can black beans
1 med. size fresh produce salsa
1 avocado, chopped
2 tsp. roasted cumin seeds
1 lime – for juice to taste
Cook quinoa according to directions. Cool in refrigerator. After quinoa has cooled, add beans, salsa, chopped avocado and roasted cumin seeds. Add lime juice and salt if needed to taste.
Options for salad: add fresh corn, cilantro or chili peppers.
