Gluten-Free Polenta with Fresh Tomato Salsa
1 18-oz pkg. Food Merchants' brand Polenta (any flavor)
4 tsp. olive oil
¼ cup chopped green onion
¼ C. shredded cheddar cheese
2 Tbsp. lime juice
1 Tbsp. chopped jalapeņo pepper
1 ½ C. chopped tomatoes
1 Tbsp. chopped cilantro
1/3 C. chopped green pepper
½ tsp. salt

Cut Polenta into 8-10 ½ inch slices. Cook ½ of the sliced Polenta in 2 tsp olive oil 2 to 3 minutes on each side or until crisp and golden brown on both sides. Remove from skillet, cover to keep warm. Repeat with remaining 2 tsp. of olive oil and Polenta slices. Sprinkle with shredded cheddar cheese and let stand until melted. Mix remaining ingredients and serve over heated polenta.
