This Colorful Veggie Roll-Up is the perfect snack! Get creative with different types of hummus, wraps and vegetables to truly personalize your roll-up.
- 1 – 12 inch tortilla, any kind
- 1/2 C. garlic hummus
- 2 oz. spinach leaves, raw
- 1/2 cucumber, sliced
- 2 oz. red cabbage, shredded
- 2 oz. carrots, shredded
- 1. Spread the garlic hummus evenly over the tortilla.
- 2. Place spinach leaves over the top of the hummus.
- 3. Mix the cucumbers, cabbage and carrots together in a small bowl.
- 4. Using a spoon, spread mixture evenly across spinach leaves.
- 5. Roll tortilla up, cut into half or thirds and serve.
