Asian Green Bean & Freekeh Salad

The crisp vegetables, hearty Freekeh and flavorful Asian dressing in this dish brings a little variety of flavors to your plate at mealtime. Taking a new ingredient like Freekeh and combining it with the “old” everyday vegetables like green beans and carrots creates a marriage of flavors that is different from your same old side dish while introducing something new into your diet.

  • 1. In a large bowl, mix together the green beans, Daikon radish, carrots, radicchio, Freekeh and green onions.
  • 2. In a small bowl, whisk together the brown rice vinegar, sugar, soy sauce, fresh ginger, garlic, red pepper flakes and oil.
  • 3. Drizzle dressing over salad, toss to coat and season with salt and pepper to taste.
  • 4. For best results, place salad in refrigerator for at least 30 minutes and stir prior to serving.
