Balsamic Chicken Panini with Pears and Cheese

  • 1. Place split chicken breasts in a resealable plastic bag and pound out to ¼ inch thickness.
  • 2. To the bag add the olive oil, vinegar, garlic, thyme, and Dijon mustard. Marinate meat for at least 1-2 hours.
  • 3. After the meat has been in the marinade, grill or pan fry until no longer pink, set aside.
  • 4. Butter a slice of bread on one side and place butter side down in a large skillet.
  • 5. Using the back of a spoon or knife spread some of the Gorgonzola cheese ball mixture on the surface of the bread.
  • 6. Top with some fresh spinach, sliced pears and balsamic chicken.
  • 7. Spread some of the Gorgonzola cheese mixture on another slice of bread and place cheese side down on the chicken.
  • 8. Spread butter on the top of the sandwich and grill until heated through and golden brown.
  • 9. Repeat process with remaining ingredients for the rest of the sandwiches.
