Beef and Barley Vegetable Soup

Beef and barley soup is often a winter staple for families and adding some hearty delicious root vegetables, including rutabaga, gives you a flavorful soup you’ll be sure to love.

  • 1. In a large stock pot heat olive oil over medium high heat, add the onion, garlic, leeks, tomato paste and beef stew meat.
  • 2. Cook for 10-12 minutes, stirring frequently until beef is browned.
  • 3. Add the broth and simmer on medium heat for 1 hour.
  • 4. Add the carrots, celery, rutabaga, parsley and barley and cook an additional 45 minutes.
  • 5. To serve, place some fresh spinach in the bottom of each bowl, ladle soup into each bowls and top with a tablespoon of sour cream if desired.
