Best Prime Rib Roast

The secret to a perfect prime rib roast is Kosher salt. It will take 1-2 boxes of Kosher salt to cover your roast, depending on the size of the roast. Expect the roast to be pink inside even when thoroughly cooked and it will not be“salty” to taste.

  • 1. Season the roast with pepper, garlic and rosemary.
  • 2. Cover the bottom of your roasting pan 1/2 inch deep with Kosher salt (be sure to use a roasting pan that fits the roast, not any larger).
  • 3. Place roast on a layer of Kosher salt.
  • 4. Cover the rest of the roast with remaining Kosher salt, leaving no part of the roast showing.
  • 5. Cover roast in pan.
  • 6. Pre-heat oven to 450 degrees and cook at this temperature for 30 minutes.
  • 7. Turn oven down to 300 degrees, cooking roast 12-15 minutes per pound.
