Bhutanese Chicken and Red Rice Soup

Instructions

  • 1. In a large stock pot heat olive oil over medium high heat.
  • 2. Add the bacon, mushrooms, leeks & garlic and saute for about 8 - 10 minutes or until bacon is cooked through, drain & place back in pot.
  • 3. Add the remaining ingredients, bring to a boil, reduce heat to medium and let simmer for 25 minutes or until rice is cooked.
