Black Forbidden Rice with Mangoes

  • 1. Place mango green tea leaves and water in a medium pot.
  • 2. Bring to a boil; remove from heat and let sit for 5 minutes.
  • 3. Drain leaves from tea and set aside.
  • 4. Next, heat coconut oil in a pot over medium heat.
  • 5. Add the garlic, onion, ginger, curry powder, red pepper flakes, salt and raisins.
  • 6. Cook over medium heat for 5-7 minutes, stirring once or twice.
  • 7. Add mango tea and black forbidden rice, bring to a boil, reduce heat, cover and simmer on low for 25 minutes.
  • 8. When rice is cooked, pour into a serving dish then gently fold in the slivered almonds and diced mangoes.
