Blue Cheese and Bacon Waffles

Who ever said waffles were only a breakfast food?! These savory waffles are great topped with a poached egg, diced avocado and tomato slices. Push the boundaries with breakfast and make waffles for dinner.

Instructions

  • 1. Preheat a waffle iron sprayed lightly with oil.
  • 2. In a large bowl whisk together the flour, sugar, baking powder, salt and pepper.
  • 3. In a small bowl, whisk together the eggs, butter and milk. Whisk together the wet and dry ingredients until just blended. Using a rubber spatula, fold in the Roquefort cheese, bacon and chives.
  • 4. Pour ¾ cup of batter onto the hot waffle iron and close lid. Bake until waffle is lightly brown and crisp, about 3-5 minutes. Repeat with remaining batter.
  • 5. Serve waffles topped with avocado, tomato, poached egg, and Roquefort cheese. Drizzle with a tablespoon of red wine vinegar if desired.
