Bolivian Quinoa Stew

With “Meatless Monday’s” becoming a norm in homes it’s great to find new recipes that fit the bill and yet still have great flavor. This dish is easy to prepare, full of great flavor and the ingredients can be changed up quite easily. At $2.71 per serving how can you go wrong?!

CROCK POT: Place all the ingredients EXCEPT the cilantro into the crock pot. Cover and cook on HIGH 3-4 hours or LOW 4-5 hours. Remove the bay leaf, sprinkle with cilantro and serve.

  • 1. In a large pot heat oil over medium high heat and sauté onions, garlic, celery, carrots and green bell pepper for 5-8 minutes or until they begin to soften.
  • 2. Next, add the garbanzo beans, tomatoes, salt, pepper, cumin, chili powder, coriander and oregano and sauté for an additional 2 minutes.
  • 3. Add the bay leaf, quinoa, vinegar and stock; bring to a boil, reduce heat and simmer for 15-20 minutes.
  • 4. Remove bay leaf from stew before serving and garnish each bowl with cilantro.
