With “Meatless Monday’s” becoming a norm in homes it’s great to find new recipes that fit the bill and yet still have great flavor. This dish is easy to prepare, full of great flavor and the ingredients can be changed up quite easily. At $2.71 per serving how can you go wrong?!
CROCK POT: Place all the ingredients EXCEPT the cilantro into the crock pot. Cover and cook on HIGH 3-4 hours or LOW 4-5 hours. Remove the bay leaf, sprinkle with cilantro and serve.
