Broccoli Grilled Cheese Sandwich

Grilled cheese sandwiches are such a comforting food to eat, but sometimes it’s fun to create something worthy of a nod. This sandwich take the cheesy broccoli side dish and makes it a surprising delicious main attraction on your plate. Don’t stop at broccoli, try something different every now and then in your sandwich, you might just find a new favorite “gourmet” grilled cheese.

Instructions

  • 1. Preheat oven to 400 degrees.
  • 2. In a large bowl mix together the oil, garlic, cayenne pepper and salt, toss the broccoli florets in the oil mixture then spread over the bottom of a roasting pan.
  • 3. Bake broccoli for 20 minutes or until tender, remove and cool for 5 minutes.
  • 4. Meanwhile, spread some softened butter on a slice of bread, place buttered side down on a griddle and top with a slice of cheese.
  • 5. Add a layer of broccoli, topped with another slice of cheese and top with another slice of bread.
  • 6. Butter the top of the bread and cook over medium high heat turning sandwich once when first side is golden brown.
  • 7. Remove sandwich from griddle when second side is golden brown and cheese is melted
