Caramel Apple Pecan Cake

  • 1. Place apples in the bottom of the crock pot.
  • 2. In a small bowl mix ¼ cup flour, cinnamon, nutmeg and ¼ cup sugar; sprinkle over the apples, toss to coat.
  • 3. Next, in a medium bowl stir together 1 cup flour, ¼ cup sugar, baking powder, salt and pecans.
  • 4. Add the milk and 2 tablespoons of melted butter, stir just until combined and spread batter evenly to cover the apples.
  • 5. Next, in a medium saucepan, combine the water, brown sugar, and butter.
  • 6. Bring to a boil; reduce heat and simmer uncovered, for 2 minutes; carefully pour liquid over the batter.
  • 7. Cover crock pot and cook on HIGH for 2 hours.
  • 8. To serve, spoon warm cake into dessert dish topped with vanilla ice cream.
  • 9. NOTE: Do not use LOW setting for this recipe.
