Chicken, Bacon and Cheddar Sandwich

When spring comes and it’s warm one day and cool the next so with the heavy winter meals are put away for summer a hot sandwich is a perfect in between meal until it’s full blown summer outside. There are thousands of different kinds of hot sandwiches and this is a classic and the flavors are simple yet marry together wonderfully.

Instructions

  • 1. In a small bowl, mix together the mayonnaise, garlic, mustard and ground chipotle peppers, refrigerate until use.
  • 2. Next spread some soften butter on one side of each piece of sourdough bread, place 4 slices butter side down onto a griddle.
  • 3. Spread some of the Chipotle mustard aioli onto each slice of bread, then layer with a slice of cheese, 2 pieces of bacon, 2 slices of tomato and some shredded chicken.
  • 4. Place another slice of cheddar cheese on top of the chicken and place the last piece of bread on top of the cheese, butter side up.
  • 5. Cover the pan and cook on one side for 4-6 minutes, flip when golden brown and cook covered an additional 4-6 minutes until cheese is melted and bread is golden brown.
  • 6. NOTE: These sandwiches can also be made on a panini press.
