Chicken Meatball Soup

This soup is quick and easy for those days when you want a hearty and healthy soup for your family or some last minute dinner guests.  These ingredients may already be in your freezer and pantry so why not whip up a batch tonight?!

  • 1. In a large bowl, mix together the ground chicken, bread crumbs, egg, onion, parsley, garlic, basil, oregano, parmesan cheese, salt and black pepper, form into walnut sized meatballs and set aside.
  • 2. Pour the chicken broth and diced tomatoes into a large pot and heat over medium high heat to a simmer, add the raw meatballs and bring to a boil then reduce heat and simmer for 8-10 minutes.
  • 3. Next, add the broccoli, cauliflower and carrots to the pot and let simmer until vegetables are tender, about 8 minutes.
  • 4. Last, add the gnocchi pasta and cook according to package instructions.
  • 5. Serve meatball soup in bowls topped with some Parmesan cheese.
