Chipotle Lime Cannellini Beans

Snacking on something salty, crunchy yet satisfying is sometimes hard to do, until now. Using seasoned beans, roasting them until crispy provides a snack that’s not only delicious, but nutritious as well.  Beans pack a protein and fiber punch that not many crunchy, salty snacks can. Play around with the beans you use and the spices or seasonings. The possibilities are endless.

  • 1. Preheat oven to 450 degrees.
  • 2. Pat dry beans with a paper towel, removing as much moisture as possible.
  • 3. Mix together the olive oil, chipotle pepper powder, lime zest and salt, add beans and toss to coat.
  • 4. Spread beans out onto a jelly roll pan and roast for 20-25 minutes, gently stir occasionally, until beans are crunchy.
  • 5. Remove and cool for 5 minutes before eating.
