  • 1. Bring a pot of water to a boil, add Israeli couscous and cook for about 8 minutes, drain and cool.
  • 2. Place the couscous, diced oranges, sliced fennel and parsley in a large bowl.
  • 3. In a small bowl whisk together the remaining ingredients, drizzle the dressing over couscous mixture and toss to coat.
  • 4. Refrigerate for at least 30 minutes, toss once more and serve.
