Creamy Wild Rice & Vegetable Bake

Instructions

  • 1. Preheat oven to 350 degrees.
  • 2. Place cooked wild rice, diced turnips, carrots, parsnips, celery, parsley, sage and thyme into a 3 quart casserole dish and stir to combine.
  • 3. In a sauté pan over medium heat melt butter and cook onions for 3-5 minutes, add flour and cook for another 2 minutes.
  • 4. Slowly whisk in the vegetable broth, Greek yogurt, parmesan cheese, salt and pepper and cook another 5-8 minutes stirring frequently until cheese is melted and sauce thickens.
  • 5. Pour sauce over wild rice ingredients, stir to combine, sprinkle with toasted walnut pieces and bake for 35-40 minutes until edges are bubbly and slightly browned.
