Crock Pot Chicken Stew

Nothing says fall like a slow simmered stew filling your kitchen with a familiar aroma. Often times we forget that chicken can replace the traditional beef in this hearty, filling, figure-friendly dish. This time of the year provides us with a variety of delicious root vegetables that enhance the flavors found in this stew. This dish is a perfect way to warm up your home and those you love.

  • 1. Trim ends and clean all of the vegetables from the bag of Harmony Valley Farm Root Vegetables, then chop into uniform size.
  • 2. Place all chopped vegetables, chicken broth, deluxe vegetable soup mix, onion soup mix, raw cubed chicken meat, onion, diced potatoes, Herbs de Provence and bay leaves into the crock pot.
  • 3. Cook on LOW for 6-8 hours or HIGH for 4-6 hours.
  • 4. Right before serving, season with salt and pepper to taste and ladle into bowls and serve with warm crusty bread.
