Garlic Parmesan Smashed Potatoes

Seasoned Yukon gold potatoes smashed with garlic, Parmesan cheese and then topped with fresh parsley make for a flavorful side dish.

  • 1. Preheat oven to 375 degrees.
  • 2. Pierce the clean potatoes with a fork.
  • 3. In a large bowl, toss the potatoes in olive oil to coat.
  • 4. Place the potatoes onto baking sheet lined with parchment paper and then season with salt and pepper.
  • 5. Bake for 35-40 minutes or until tender.
  • 6. Remove from oven and cool. Use a cup or small plate to gently flatten the potatoes. At this point you can refrigerate until use or continue with the steps.
  • 7. Preheat oven 400 degrees.
  • 8. In a small bowl melt the butter, garlic and parsley together. You can melt in the microwave doing it in 15 second increments.
  • 9. Lay smashed potatoes on a parchment lined baking sheet in a single layer.
  • 10. Use a pastry brush or spoon to spread the butter mixture over the top of each potato.
  • 11. Sprinkle with Parmesan cheese and bake 9 to 11 minutes or until potatoes are hot and cheese is melted.
  • 12. Garnish with parsley and serve.
