Garlic Scape Pesto

NOTE: The pesto keeps in the fridge, covered for up to 1 week.   Mix pesto with your favorite cooked pasta, as a topping for Crostini with Ricotta cheese, fish or chicken.

  • 1. Puree the garlic scapes, pistachios, Parmesan, salt and pepper in a food processor or blender until pureed.
  • 2. With the motor running, slowly pour the oil through the opening.
  • 3. Season the pesto with more salt and pepper to taste.
