Gluten-Free Peruvian Pork Stew

Take a trip to South America with this delicious and comforting classic dish. In the winter we all desire “warmer climates”, but you can bring that feeling into your kitchen with this hearty stew filled with lots of veggies including the French Fingerling potato.

Instructions

  • 1. In a large 10 quart stock pot stir together the ground cumin, jalapeno pepper, minced garlic, oregano, diced red onion, chicken stock, tomato paste and ground cloves.
  • 2. Add the diced pork shoulder and bring ingredients to a boil on high, reduce heat and simmer on low for 1 hour 15 minutes.
  • 3. In the last 30 minutes add the sliced potatoes and simmer until pork is cooked through and potatoes are tender.

  • 5. NOTE: To make this in a crock pot. Place all the ingredients in the crock pot and cook on LOW for 8-10 hours or HIGH 4-6 hours.
