  • 1. Preheat oven to 350 degrees. Grease an 8x8 inch pan with coconut oil; set aside.
  • 2. In a large bowl, blend flour, oats, butter, chia seeds and lemon zest on low speed.
  • 3. Add 1/2 cup brown sugar to mixture and blend together on medium speed for 2 minutes - mixture will look dry.
  • 4. Press mixture into a lightly greased 8x8 inch pan. Set aside.
  • 5. In a small bowl mix eggs with 1/4 cup brown sugar.
  • 6. Stir in almonds, coconut, and cranberries.
  • 7. Spread evenly over mixture in pan and bake for 30-35 minutes, or until toothpick inserted in center comes out clean.
  • 8. Cool, and enjoy. For firmer bars, place them in the refrigerator before cutting.
