Greek Pita Panini

This Panini is perfect for a meatless Monday’s or really any day you want to make meatless. You can grill your own vegetables or buy some already grilled for a quick, delicious meal that will leave you full & satisfied.

Instructions

  • 1. Spread ¼ cup hummus on the bottom of each pita then sprinkle some feta cheese on the hummus.
  • 2. Next, layer the grilled vegetables, Kalamata olives, red onion and tomato slices.
  • 3. Sprinkle with additional feta cheese, place the top of the pita into place and using a Panini press cook each sandwich for 4 to 6 minutes, remove and let cool.
