Grilled Mexican Egg Bowls

Grilling your breakfast shouldn’t be just for camping or cabin life, it’s for anytime anywhere and this recipe makes it very easy. Using peppers as your bowl fill it with scrambled eggs, meats, vegetables or cheese to create a fun, beautiful breakfast presentation. The smokey char of the pepper coupled with the eggs, chorizo and vegetables makes for a delicious start to the day.

Instructions

  • 1. Cut each stem top off the pepper and carefully remove the seeds and membranes, set aside.
  • 2. Place equal amounts of beaten eggs, Chorizo sausage, red onion, jalapeno, tomatoes and shredded cheese into each pepper bowl.
  • 3. Place pepper on a grill preheated to 350 degrees, close lid and grill for 25-30 minutes or until eggs are set.
  • 4. Top with slices of avocado and salsa right before serving.
