Grilled Pork Chops with Apricot Chipotle Glaze

Using up those pantry ingredients to create a delicious quick meal is as easy as 1-2-3 with this sweet and spicy grilled pork chop. As with every summer, finding a new way to grill your meat keeps things fresh, new and flavorful.

  • 1. Preheat grill to 350 degrees or medium-high heat.
  • 2. Season pork chops with salt and pepper and grill for 8-10 minutes per side until internal temperature reaches 145 degrees, turn off grill and keep covered.
  • 3. Meanwhile, in a small saucepan over medium heat melt the apricot fruit spread, vinegar, garlic and chipotle pepper powder.
  • 4. Simmer on medium heat for 10 minutes until thickened.
  • 5. Using a pastry brush, spread some of the glaze on one side of the pork chop, flip and brush glaze on the other side and let sit on the hot grill for 5 minutes.
  • 6. Pull grilled pork chops off the grill and serve with warm apricot glaze.
