Hearty Sausage & Kale Soup

Chock full of vegetables and hearty sausage, this one pot meal is perfect for any day of the week.

  • 1. In a large stock pot heat olive oil over medium heat, add the onion, diced carrots, celery, garlic and red pepper flakes to stock pot and cook over medium heat for 6-8 minutes stirring frequently.
  • 2. Add cooked sausage, chicken stock, potatoes, cannellini beans, bay leaf, salt and pepper to the pot.
  • 3. Bring to a boil, then turn to low and simmer for 15 - 20 minutes or until potatoes are fork tender.
  • 4. Add the chopped kale and whole milk and simmer for an additional 8-10 minutes. Serve with warm crusty bread.
