Kid-Friendly Beefy Stew

  • 1. Place the beef stew meat in a large bowl and lightly coat with flour; set aside. For gluten-free, omit this step.
  • 2. In a large stock pot, heat the olive oil over medium heat. Add the shallots and saute for 2-3 minutes, or until shallots begin to soften.
  • 3. Add the garlic and beef stew meat to the pot and cook for 10-12 minutes, or until stew meat is browned. You may need to add more olive oil at this point.
  • 4. Add the tomato paste, Herbs de Provence, and beef broth to the pot, bring to a low boil and then reduce heat to medium-low and simmer for about 1 hour.
  • 5. Add the carrots, celery, rutabaga, potatoes and parsley and simmer until the potatoes and rutabaga are tender (about 30-45 minutes). If desired, add the frozen peas for the last 5 minutes of cooking.
  • 6. Season with salt and pepper and serve warm. Garnish with fresh rosemary or thyme sprigs.
