Lamb & Lentil Sauce

Cooler months prompt us to create dishes that are warm, hearty & healthy. This dish uses ground lamb combined with delicious lentils, fresh vegetables & fragrant spices to create a dish that’s a turn from the norm. NOTE: You can easily swap the ground lamb for a lean ground beef in this dish.

  • 1. Place the oil in a large skillet over medium high heat brown the ground lamb, garlic and onion, breaking up the meat into small pieces as it browns.
  • 2. Drain meat, return it to the skillet with the celery, carrots, tomato sauce, vegetable broth, red curry paste, salt, coriander, caraway seeds, cumin and lentils.
  • 3. Simmer for 20 to 25 minutes over medium heat until vegetables are tender.
  • 4. Serve over cooked fusilli pasta or basmati rice.
  • 5. NOTE: Ground beef can be substituted for ground lamb.
