Loaded Baked Potato Pancakes

Instructions

  • 1. Melt 1 tablespoon butter in a saute pan over medium high heat.
  • 2. Add onion and garlic, and cook for 5-7 minutes or until onions are soft and translucent.
  • 3. In a large bowl, mix together the onion mixture, paprika, salt, pepper, parsley, flour, mashed potatoes and eggs.
  • 4. Melt 1 tablespoon butter in saute pan over medium high heat.
  • 5. Using an ice cream scoop, drop pancake mixture into the hot saute pan and cook each pancake 3-5 minutes per side or until crisp.
  • 6. Repeat with remaining tablespoon of butter until all the potato pancakes are cooked.
  • 7. Serve each pancake layered with the sausage slices, cole slaw, shredded cheddar cheese, baked beans and BBQ sauce.
