Maple Chili Chicken

Combining the sweet maple syrus and spicy red pepper chili flakes in this chicken breast marinade is a great way to change up your weekly chicken dinner. This recipe can be used with bone-in chicken pieces as well, just adjust the grilling time to allow for the chicken to cook through completely.

NOTE: When using bone-in chicken breast, legs or thighs increase the marinating time to 6 to 8 hours for more flavor to be absorbed by the meat. Also increase the grilling time to ensure the meat is cooked to the correct done temperature.

  • 1. Place the chicken into a gallon size plastic bag.
  • 2. Next, add the syrup, vinegar, Dijon, shallots, salt, pepper and red pepper flakes into a blender and blend on low.
  • 3. Pour oil through the opening in the lid while the blender is running to emulsify the ingredients well.
  • 4. Reserve 1/3 cup of the marinade, cover and refrigerate.
  • 5. Pour the remaining marinade over the chicken, seal the bag and refrigerate for 3 to 4 hours.
  • 6. Heat grill to medium heat and grill chicken for at least 8-10 minutes per side for breasts or 3-4 minutes per side for tenders or until internal temperature registers 165º F when checked with an instant read thermometer.
