Mediterranean Beef Rolls with Asparagus

Bring out these tasty rolls for your guests to nosh on. The olive feta filling in the beef rolls is extremely flavorful while the asparagus adds color and lots of vitamins and minerals!

Instructions

  • 1. Place olive oil, lemon juice, salt, pepper, oregano & minced garlic in a small bowl and whisk to combine.
  • 2. Add the thin sliced sirloin tip meat & cover meat with marinade.
  • 3. Refrigerate for at least 2 hours or overnight.
  • 4. Remove meat from marinade & set marinade aside.
  • 5. Place meat on a flat surface and using the back of a spoon spread even amounts of olive tapenade over the surface of the meat.
  • 6. Sprinkle with the feta cheese and roll up each slice of meat.
  • 7. Place 2 tablespoons of the meat marinade in a skillet, heat over medium heat and when hot add the beef rolls to the pan.
  • 8. Cook about 3-4 minutes each side, turning beef when needed.
  • 9. Remove meat from pan and place on serving plate, cover to keep warm. Using the same skillet, add the zest from 2 lemons, white cooking wine, asparagus, Dino kale and red pepper flakes.
  • 10. Cover & saute for 5-7 minutes stirring occasionally. Serve with beef rolls.
