Refried Beans

This is Kirsten’s Bulkanomics recipe using pinto beans from the bulk department.  By cooking your own pinto beans, you can make refried beans from scratch with various spices, garlic, onion and jalapeno. This dish is only $1.10 per serving.

Instructions

  • 1. Heat the coconut oil in a large skillet over medium heat.
  • 2. Add the onion, garlic and jalapeno pepper for about 3 minutes. Stir in the coriander, cumin and oregano and cook for 3 minutes.
  • 3. Stir in the coriander, cumin and oregano and cook for 2-3 minutes.
  • 4. Stir in the beans and broth and cook until the beans are warmed, about 5 minutes.
  • 5. Mash the beans coarsely with the back of a large spoon.
  • 6. Add more broth if needed.
  • 7. Season with salt and pepper, to taste.
  • 8. Top with cheddar cheese and serve with tortilla chips.
  • 9. NOTE: To cook pinto beans place 2 cup dry beans that have been sorted and rinsed in 6 cups of water and bring to a boil, reduce heat and simmer for 1 1/2 -2 hours until beans are tender.
