Roasted Cauliflower Soup

The New Year brings about a desire to eat healthier, increase our vegetable intake and many other changes in our eating. This soup is great for a mid afternoon snack that will satisfy you, fill you up and leave you feeling good about what you ate.

Instructions

  • 1. Preheat oven to 425 degrees.
  • 2. Place cauliflower, celeriac, onion and garlic in a large bowl.
  • 3. In a small bowl mix together the olive oil, salt, black pepper and cumin.
  • 4. Pour oil mixture over the vegetables, toss to coat all vegetables and lay in a roasting pan in a single layer. Bake for 35 to 40 minutes, remove from oven and puree vegetables with broth in batches.
  • 5. Pour soup into a pot, stir in the hummus and bring to a boil, reduce heat and simmer for 10 minutes.
  • 6. Top with pistachios and serve.
