Rustic Root Vegetable Soup

As with most winters we’ve eaten a variety of soups and stews so finding something different is a welcomed option. This soup has wonderful flavor combinations from the root vegetables and fresh herbs and even the bacon. It’s perfect if you looking for something just a little bit different this time of year.

  • 1. Place parsley and poultry herb bundle in the center of the cheesecloth, using dental floss or string, gather up the corners and tie the cheesecloth shut, set aside.
  • 2. In a large pot over medium high heat cook bacon for 8-10 minutes, stirring occasionally until browned, pour off all but 1 tablespoon bacon fat from pot.
  • 3. Add the butter, onion, garlic, chicken, salt and black pepper, cook for 6-8 minutes stirring occasionally until chicken is no longer pink and onions are translucent.
  • 4. Add the broth, root vegetable medley, herbs in cheesecloth and bay leaves.
  • 5. Bring to a boil, reduce heat and simmer for 25-30 minutes or until vegetables are fork tender.
  • 6. **NOTE: Fresh poultry herb bundles usually have a combination of thyme, rosemary & sage and sometimes oregano as well.
