Santa Fe Chorizo Quesadilla

Soft flour tortilla shells filled with spicy chorizo combined with our Sante Fe Black Bean Salad and melted cheese make for a flavorful quesadilla. Serve with fresh guacamole and sour cream.

  • 1. Spray a large non-stick skillet with non-stick cooking spray.
  • 2. Turn the heat to medium and place one tortilla shell in the skillet.
  • 3. Add ½ C. of the following to half of the tortilla shell: Santa Fe Black Bean Salad, Chorizo, and cheese.
  • 4. Fold over the tortilla shell so that toppings are covered.
  • 5. Using a spatula, press down on the tortilla shell until the bottom side is golden brown.
  • 6. Carefully flip the quesadilla press down until cheese is melted and the tortilla is browned.
  • 7. Remove from heat and serve warm.
