Sausage, Potato & Cabbage Skillet

Sometimes a quick, hearty and delicious one skillet meal makes a busy week much welcome. This skillet meal can also be made for breakfast or brunch when topped with a poached egg and cheese.

Instructions

  • 1. Melt butter in a large skillet, add diced potatoes and red onion, cooking for 8-10 minutes, stirring occasionally until potatoes are tender.
  • 2. Add the diced sausage and shredded Cole slaw mix, saute for an additional 4-7 minutes and season with salt and pepper to taste.
