Sausage Potato Soup

Have you ever walked away from eating at a restaurant saying “I could easily make that dish?” This soup recipe was inspired by a bowl of soup from a familiar restaurant and has been a favorite of those who’ve tried it. So next time you are craving a soup and salad with some bread sticks, try out this recipe and see if you won’t keep it in your “good recipe” file.

Instructions

  • 1. Cook the sausage, onion and garlic in a medium stockpot over medium high heat for 10-12 minutes until sausage is no longer pink and the onions are translucent.
  • 2. Break the sausage up into small pieces as it cooks.
  • 3. Drain meat, return to the pot and add the potatoes, broth rubbed sage, thyme, cayenne pepper, salt and pepper.
  • 4. Simmer for at least 30 minutes.
  • 5. Add the sliced kale and heavy whipping cream, stir well to combine and let simmer for an additional 8-10 minutes.
  • 6. Ladle into your serving bowls and serve with slices of crusty French bread.
  • 7. NOTE: This can also be prepared in a crock pot for 10-12 hours on low or 5-6 hours on high for a ready to eat meal after a long day at work or school.
