Shaved Buffalo and Gorgonzola Panini

Nothing compares to a warm, crispy, gooey sandwich. A traditional “grilled cheese” gets a ‘mature’ makeover with delicious fresh ingredients for us adults who will always be big kids at heart.

NOTE: To shave raw buffalo meat, place the buffalo meat in the freezer for 30-45 minutes, remove and using a sharp knife or electric knife, slice thin prior to cooking.

SUBSTITUTION: You can use leftover cooked & shredded buffalo roast meat.

Instructions

  • 1. Place 4 slices of bread face side up.
  • 2. Spread about 1 to 1 1/2 tablespoons of the Gorgonzola cheese ball onto the surface of each slice of bread.
  • 3. Place a layer of grilled vegetables on each slice of bread.
  • 4. Next place some of the portabella mushroom slices on top of the grilled vegetables.
  • 5. Layer the shaved buffalo meat on top of the mushrooms along with some caramelized onions.
  • 6. Spread about 1 to 1 1/2 tablespoons of the Gorgonzola cheese ball on to the surface of the last 4 slices of bread and place slices, cheese side down, on top of the sandwich.
  • 7. Carefully transfer the sandwich to a panini press or other type of grill and cook for about 6-8 minutes or until heated through.
