Smoked Turkey & White Bean Soup

Smoked turkey simmered in chicken broth with onions, celery, carrots, spices and beans all topped with Parmesan cheese.

Instructions

  • 1. In a large pot, heat oil over medium-high heat.
  • 2. Add the onion, celery, carrots, parsley and garlic and sauté for 6 – 8 minutes, or until vegetables are tender.
  • 3. Add the bay leaves, salt, pepper, sage, cayenne pepper, chicken broth, beans and smoked turkey, bring to a boil.
  • 4. Reduce to medium heat and simmer for 20 – 25 minutes, stirring occasionally.
  • 5. Remove bay leaves and top with parmesan cheese.
  • 6. Serve with rustic bread.
