Soy-Delicious Edamame Salad

Nothing says spring like this light and flavorful salad packed with edamame, cauliflower, carrots and red kale. It tastes so good you won’t even realize your loading up on protein, fiber and vitamins.

Instructions

  • 1. In a small bowl whisk together the oil, red wine vinegar, Dijon mustard, shallot, mint, salt & pepper.
  • 2. Refrigerate until use. In a large bowl toss together the edamame, cauliflower florets, fennel, shredded red kale and shredded carrots.
  • 3. Pour dressing over salad, toss to coat and refrigerate for at least 30 minutes prior to serving.
  • 4. Toss salad and serve.
