Springtime Salad

This Springtime Salad is loaded with vegetables like kale, cabbage, carrots and broccoli and then topped with pepitas, walnuts and dried cranberries. Toss with the tangy Greek-Yogurt Dressing and you’ll forget winter even happened.

Instructions

  • 1. In a small bowl mix together the Greek yogurt, apple cider vinegar, sugar, green onions and poppy seeds.
  • 2. Drizzle vegetables with the tangy Greek yogurt dressing, toss to coat and let sit for 30 minutes before serving. Cover & refrigerate for at least 30 minutes.
  • 3. In a large bowl, mix together the broccoli, kale, cabbage, carrots, pepitas, dried cranberries and walnuts.
  • 4. Drizzle vegetables with the Greek yogurt dressing and toss to coat.
  • 5. Serve immediately, or chill in the refrigerator for 30 minutes, if desired.
