Strawberries and Cream Stuffed French Toast

With fresh strawberries and ricotta cheese stuffed in between 2 layers of walnut cranberry bread the traditional stuffed french toast made with cream cheese and jam gets a new look.  Top it with more fresh strawberries and it’s a winner no matter how you slice it!

  • 1. Lay slices of cranberry walnut bread over the bottom of a greased 9x13 glass baking dish.
  • 2. Spread each slice of bread with Ricotta cheese then layer with the strawberries.
  • 3. Next in a large bowl, using a whisk or hand mixer beat together the eggs, milk, vanilla, maple syrup and cinnamon.
  • 4. Pour egg mixture over the bread slices in the pan, cover and refrigerate for up to 12 hours or overnight.
  • 5. Bake in a 350 degree oven, covered with foil for 30 minutes.
  • 6. Remove foil and bake an additional 30 minutes until set.
  • 7. Serve with fresh sliced strawberries and warm maple syrup.
