Stuffed Meatballs with Radish Salad

With meatballs stuffed with cheese, game day doesn’t get any better than this. Add a fresh radish salad packed with fresh flavors and protein and you won’t feel guilty grabbing another meatball …or two!

RADISH SALAD: In a bowl, mix together the radishes, cucumbers, minced parsley, Parmesan cheese, juice of lemon, salt and pepper. Serve with stuffed meatballs.

  • 1. In a large bowl mix together the ground meat, parsley, bread crumbs, salt, pepper, egg and Worcestershire sauce until combined.
  • 2. Using a spoon, scoop out about 2 tablespoons of meat, place a cube of cheese in the center of the meat and form a walnut sized meatball, covering all of the cheese in the center of the meatball.
  • 3. Place olive oil in a large skillet over medium heat and add the meatballs.
  • 4. Cook meatballs for 12-15 minutes, carefully turning meatballs with a small spoon every 3-4 minutes so the meatballs cook evenly.
  • 5. Once cooked all the way through, serve with the radish salad.
