Sweet & Tangy Buffalo Bites

Sweet apricot jam and tangy Dijon mustard make a tasty sauce for these buffalo meatballs. Enjoy these with mashed potatoes, rice or as an appetizer.

  • 1. In a large bowl mix together the ground buffalo, egg, bread crumbs, garlic, onion, parsley, horseradish, salt and black pepper.
  • 2. Form into walnut sized meatballs and set aside.
  • 3. Heat oil in a large skillet, add the meatballs and cook over medium heat for 8-10 minutes until cooked through.
  • 4. Meanwhile, in a small bowl mix together the apricot fruit spread and Dijon mustard, pour over meatballs and let simmer for an additional 5 minutes.
  • 5. Serve hot with mashed potatoes, potato wedges or rice.
