Tenderloin & Turnips Skillet

  • 1. Season tenderloin generously with salt and pepper and set aside for 10 minutes.
  • 2. In a large skillet heat olive oil over medium heat and sear the tenderloin on all sides for 3-4 minutes per side.
  • 3. Remove tenderloin and layer the herbs, onion and garlic on the bottom of the pan.
  • 4. Place the tenderloin on top of the herbs, add the broth and tuck the vegetables around the tenderloin.
  • 5. Cover and simmer for 25 - 30 minutes over medium heat, turning the tenderloin two or three times.
  • 6. Serve tenderloin with vegetables and sauce.
  • 7. NOTE: To make gravy, whisk 1 tablespoon of flour or cornstarch with the seasoned broth and simmer for 5-8 minutes until thickened.
