Twice Baked Potatoes

Looking for a change for classic mashed potatoes? This twice baked potato side dish is easier than you think.  Use a cheese with a big flavor profile like “Tandoori Spice” or “Garlic and Herbs” that will leave you with a delicious end result.

  • 1. Preheat oven to 375 degrees.
  • 2. Scrub all potatoes and pat dry.
  • 3. Rub each potato skin with olive oil and sprinkle with salt.
  • 4. Place on a cookie sheet and bake for 45 minutes to 1 hour until center is soft when pierced with a knife.
  • 5. Remove from oven and let cool for 20 minutes.
  • 6. Cut potatoes in half lengthwise and use a spoon to carefully scoop out the insides of the potato, leaving a thin layer of potato next to the skin.
  • 7. Place potato insides into a large bowl and add the cheese, butter, heavy cream, parsley and paprika.
  • 8. Using an electric hand mixer, blend all the ingredients to a desired consistency and season with salt and pepper.
  • 9. Spoon the mixture back into the potato skins.
  • 10. Return the potatoes back to the oven and bake an additional 25-30 minutes. If desired, sprinkle with cheese the last 5 minutes of baking.
  • 11. Remove from oven and cool for 10 minutes prior to serving.
