Vegetable Pad Thai with Peanut Sauce

Making your own takeout at home is a great idea when your family has time to work together in the kitchen. This dish is a little different than a traditional Pad Thai in that the sauce is similar to a peanut sauce and coats the noodles a little bit more, but is simply delicious. Add some chicken for those who’d like some meat or tofu for your vegetarians.

  • 1. In a small pot over medium high heat melt 1 tablespoon coconut oil and sauté the ginger, garlic and red pepper flakes for 3-4 minutes, stirring occasionally.
  • 2. Add the coconut milk, peanut butter, vinegar, sugar, lime juice and Tamari, whisk over medium heat until smooth then turn peanut sauce to low until use.
  • 3. Add the remaining 2 tablespoons coconut oil into a large skillet and over medium high heat sauté the onion and vegetables for about 4-6 minutes or until they are tender, but crisp.
  • 4. Add the cooked noodles to the vegetables, spoon in the peanut sauce to desired taste and toss to coat.
  • 5. Sprinkle with chopped peanuts right before serving.
