  • 1. Place the shredded kale, apples, wild rice, carrots, green onions, pecans and cranberries in a large bowl.
  • 2. In a small bowl, whisk together the apple cider vinegar, honey or syrup, mustard, shallot, salt and pepper.
  • 3. Slowly pour the olive oil into the bowl with the dressing, whisking constantly, until well blended.
  • 4. Pour dressing over the salad ingredients, toss to coat and serve.
