  • 1. In a large pot, melt butter and coconut oil over medium high heat, cook diced onion, garlic, celery and raisins for 4-6 minutes.
  • 2. Next stir in the wild rice blend, parsley and diced yams, continue stirring and cook for an additional 6-8 minutes or until rice just begins to brown.
  • 3. Add water and vegetable broth powder, bring to a boil and reduce heat to simmer for 40-45 minutes or until rice is tender and all water is absorbed.
  • 4. Pour into a serving dish, sprinkle with chopped Brazil nuts and serve.
